The task force, comprising five organisations specialising in food technology, marketing, legal consultancy and social enterprise cooperatives, needed to develop a series of technological tools to support the entire process of wild mushroom foraging, from the actual gathering of the mushrooms through to their subsequent sorting into batches and labelling to ensure traceability. With regard to harvesting, it should be possible to provide information on when, where and by whom the mushrooms are harvested, whilst also taking into account that many of the tool’s users would belong to groups at risk of social exclusion who are part of the task force. To ensure traceability right through to the end customer, collection centres (distribution companies, public markets, etc.) must have technology that allows products to be sorted into batches, each with its own identification label. Finally, and as an indirect objective, it is also important to understand the production situation in different areas by carrying out geographical analyses (GIS) to evaluate various parameters and optimise the use of farmland.
