The Chestnut flour value chain and its sustainability in Alta Versilia (Tuscany)
MOVING was an EU Horizon 2020 project that aimed to build capacities and co-develop relevant policy frameworks across Europe to support the establishment of new or upgraded/upscaled value chains that contribute to the resilience and sustainability of mountain areas. The project engaged value chain actors, stakeholders, and policymakers in a total of 23 European mountain regions in 15 countries. This Practice Abstract focuses on the chestnut flour production in Tuscany, Northern Apennines. The traditional methods are still used in the area, increasing the production of flour, starting with reducing the abandonment of the chestnut tree and managing the process in a structured way.
