Cheese defects database - EIP project video
The production of cheese is very complex and requires a great deal of knowledge. Cheese defects, i.e. undesirable sensory characteristics, should be avoided. Otherwise they lead to high economic losses. In the EIP project Hessischer Hofkäse, cheese defects are systematically recorded in a database and their causes identified. In the cheese defect database, consultants and cheesemakers can find free and practical tips on how to avoid defects. In this way, they can learn from the experiences of others and optimize their own cheese.
