About project

The project concerns the production of camembert cheese from raw organic milk from Norman cows, fed on grass and farm hay with a minimum ration of grain (or no grains at all), without silage, thus giving the milk a great microbial diversity specific to each farm. This involves supporting producers of "natural farmer camembert" in the development of their identity and activity by stepping up specific practices and organizing a collective in the process.
