This study presents a four-year (2008–2011) systemic analysis of 56 organic livestock farms in France’s Massif Central, examining the stability and variability of technical and economic results and identifying key performance drivers.

Between 2008 and 2011, a collaborative program monitored 56 organic livestock farms in the Massif Central across four production types: cattle for milk, cattle for meat, sheep for milk, and sheep for meat. Annual technical and economic data revealed generally stable and favorable outcomes, yet significant variability among farms. Despite lower labor productivity, farms with more diversified crop rotations, higher food self-sufficiency, and strong technical management achieved incomes over four times greater than those of less diversified operations.
