The MANOE project evaluated the tolerance of allergic children to low doses of wheat, egg, milk, and peanut, and assessed the ability of commercial analytical methods to detect and quantify these allergens at concentrations as low as 10 mg/kg in complex food matrices.

In the absence of established clinical or regulatory thresholds for allergen content, the MANOE project aimed to identify children who can tolerate low doses of wheat, egg, milk, or peanut, develop communication strategies for conveying individual tolerance levels, and evaluate the sensitivity and quantification capabilities of commercial analytical methods. Oral challenge tests confirmed tolerance to small allergen amounts and facilitated dietary relaxation. While analytical methods reliably detected contaminations at 10 mg/kg, they lacked accuracy in quantifying egg, milk, and peanut levels in processed foods.
