About project

The Burgundy industrialists encounter difficulties when processing Burgundy mustard seeds both in terms of the transformation process and te quality of the finished product. The project aims to determine the criteria for evaluating the technological quality of the mustard seeds. These criteria will allow seed lots to be monitored, selected, produced and processed. The establishment of agronomic trials will help understand the influence of crop parameters on the quality of the seed.
