The Mairing farm, located at 1,450 m in South Tyrol’s Venosta Valley, has been managed by Harald Paris since 2003. It specializes in organic dairy and vegetable production, with 4,000 m² dedicated to vegetables since 2010 and organic dairy farming since 2011. The farm spans 6.7 hectares of grassland, supporting 9 dairy cows and 2–3 young cattle. Cows graze on nearby pastures from May to mid-October, including a 1.1 ha woodland pasture used at night during peak heat. High forage quality reduces cereal feed needs. A staircase in the original tie stall enables winter access to outdoor areas. Farm holidays are a key activity, supported by family cooperation. A transition to loose housing is planned to improve guest satisfaction. Regular overseeding maintains sward health.
