Producing 40,000 litres of milk annually from 200 sheep, he joined the 'Latte Nobile' model, ensuring traceability, technical support, brand recognition, and premium pricing. The model mandates at least 70% pasture-derived dry matter and prohibits silage, promoting biodiversity and sustainable management.
