Selling ice-cream adds value to farm-produced milk

Case study on Björketorp Farm's transition to value-added organic dairy and crop production in Sweden

or

Detail description

Björketorp Farm in Blekinge, Sweden, spans 220 hectares and operates 120 dairy cows using an automatic milking system. The farm produces 9,600 kg of KRVC-certified milk per cow annually and grows winter oilseed rape, faba beans, triticale, barley, and grasslands for silage. It is certified organic and has developed value-added products, notably homemade ice-cream made from farm milk, sold on-site and to local restaurants. The initiative, launched six years ago, reflects a commitment to quality, sustainability, and community engagement, with plans to expand through events and a potential restaurant. The farm also raises 11 horses and uses contracted services for harvesting and manure spreading.
