Ottonese and Pontermolese exhibit high casein content and yield, ideal for fresh and aged cheeses. Reggiana is key for Parmigiano Reggiano. Group Operations (GOs) 'Convenient' and 'Biodiversity' promote low-investment, monoracial dairy products. Milk composition data show Ottonese has lower saturated fat, higher monounsaturated fats, and elevated CLA.
