The UVA PRETIOSA project develops ecoinnovations in the vitivinicola sector, focusing on producing a high-quality extract from immature grapes using existing infrastructure. This innovation supports sustainable practices and meets rising market demand for sulfite-free wines. Market analysis shows consumers are willing to pay more for such products, and for some foreign markets, sulfite-free status is now a mandatory requirement. Funded by the European Union, the project promotes circular economy models and knowledge sharing through EU-FarmBook and EIP-AGRI initiatives.
