The study evaluates the impact of digestate application on vineyard soil management, focusing on eco-physiological responses and grape quality. Four treatments—digestate in cover, incorporated digestate, mineral fertilizer, and control—were assessed. Incorporated digestate showed optimal gas exchange and improved vegetative performance, while the control group exhibited water stress during peak heat. At harvest, digestate reduced Brix levels but increased berry size and enhanced anthocyanin and polyphenolic balance. Yield was significantly higher with digestate, without compromising grape quality. Results indicate digestate supports sustainable vineyard management by boosting performance and yield.
