This document details the "Zielone Mleko" operation, highlighting technological innovations in continuous cheese production. A VIS-NIR spectrometer monitors acidity, fat, protein, and water content in real time at the output of a column-forming-pressing system. Continuous pH measurement prevents under- or over-acidification. A milk repasterizer ensures uninterrupted, hygienic milk supply to process vessels. The column system, compatible with existing lines, uses minimal new components, standard molds, and pneumatic delays for continuous, damage-free operation. An automated control system in the lower section ensures precise cheese block parameters. An inline Corona process spectrometer measures composition via reflected light. Sensors provide real-time data for process control, enabling continuous quality and safety monitoring, traceability, and compliance with safety standards. The system integrates advanced quality management with industrial innovation.
