The GO DIANA project develops a sustainable circular value chain for *Tenebrio molitor* (TM) larva-based insect protein in human food products. It optimises processing to enhance nutritional, sensory, and functional properties, creating competitive ingredients for food formulations. The project focuses on prototyping nuggets, meatballs, sausages, and hamburgers, assessing technical, economic, and environmental viability. Conducted in Catalonia, Spain, with funding from DACC, the EU, and in-kind contributions, it supports sustainable agriculture and innovation under the Rural Development Program 2014–2020.
