A collective processing workshop (ATC) is a local structure managed by groups of farmers who pool equipment and skills to process their products and sell them through short food supply chains. Today, over 130 ATCs operate in France, requiring significant time and strong farmer commitment. The dual individual and collective nature of these economic projects poses challenges in the emergence and launch phases, making robust project management essential. Ultimately, ATCs foster the development of more sustainable territorial food systems by reinforcing local cooperation, enhancing direct sales, and contributing to environmental, economic, and social resilience.
