This article reviews how toxic substances in food behave in the human digestive tract. It examines two main groups of contaminants: micropollutants that build up in crops and animals, and toxicants formed during food processing. The authors note that current chemical risk assessments often rely on contaminant levels in raw foods and overlook the modifying effects of digestion on contaminant release. They describe new in vitro digestive models and analytical tools that can better simulate the gut environment, leading to more accurate exposure estimates. The paper also highlights the importance of studying interactions between these contaminants and intestinal microbiota for improved health risk assessment.
