    En este caso se realiza la comparativa entre dos especies de trufas muy comerciales, como son la trufa negra (Tuber melanosporum) y la trufa negra de invierno (Tuber brumala). Se comparan sus características físicas y se indica como diferenciarlas en caso de duda. También se ponen frente a frente sus cualidades alimenticias y sus propiedades organolépticas. Ambas son joyas gastronómicas. Por último, se comparan sus productividades.
