The study reviews the application of untargeted metabolomics for precise assessment of dietary phytomicronutrient intake and internal exposure in humans. By profiling hundreds of phytochemical metabolites in blood and urine without prior compound selection, this exploratory approach has identified new biomarkers of plant food consumption and may reveal undiscovered bioactive compounds. It also highlights how interindividual differences in absorption and metabolism affect phytochemical concentrations in biofluids and demonstrates that dietary choices or food production methods can be evaluated for their real impact on consumer exposure.
