In processed meat products, nitrite and nitrate serve key functions in color development, flavor formation, and microbial inhibition, yet pose toxicity concerns due to nitrosamine formation. EU directives strictly regulate their addition, prompting ongoing assessment of reduced usage. This study outlines toxicological thresholds, regulatory limits, and potential risks from lowering additive levels, including microbial spoilage and sensory changes. It then reviews emerging alternatives—such as concentrated celery juice powder and bacterial nitrate reductase—to generate nitrite from natural nitrates. While no single substitute replicates all nitrite functions, combining such strategies can lower overall nitrite content without compromising safety or product quality.
