Dehydrated Products from Traditional Romanian Apple Varieties: Processing and Consumer Preferences

This research project preserves traditional Romanian apple varieties by developing dehydrated products such as chips, teas, and snacks, emphasizing taste, aroma, and water content. Products from varieties including Poinic, Mustos, Summer, Winter, Iona-than, Dulce, and fruit mixes were tested for consumer preference, HACCP compliance, and nutritional composition. A questionnaire assessed consumer feedback, with results accessible via provided link. The project, 90% complete by October 2023, is funded by the European Union and supports innovation and knowledge exchange through EU-FarmBook and EIP-AGRI initiatives.
