This project explores ovine biodiversity in Veneto to create economic opportunities for farmers. It highlights nutraceutical benefits in meat and milk from Pecora Brogna and Alpagota breeds, with milk showing strong potential for specialty cheese production based on pasture composition. Regulations link breeding practices to meat quality. Wool from four breeds was characterised, with processing methods and fleece management guidelines developed. A mobile press prototype was designed to compress greasy wool, reducing transport costs and improving preservation. Findings support supply chain decision-making and are backed by EU funding.
