This project enhances dairy chain sustainability in Basilicata, Italy, by standardizing jenny’s milk production to improve efficiency and support biodiversity. It addresses challenges in bovine milk, jenny livestock, and sector diversification. Standardization of breeding, milking, and storage processes boosts productivity and income while preserving biodiversity through lysozyme-rich milk, an alternative to egg-derived lysozyme that reduces defects in cow and sheep milk cheeses. The technology for producing vaccine cheeses ensures consistent, replicable quality across three ripening stages, yielding versatile, highly palatable cheeses with distinct textures and flavors. Ideal for diverse culinary uses, these cheeses appeal to broad consumer preferences, especially longer-aged variants. Funded by the European Union, the project is accessible via EU-FarmBook.
