La trufa a diferencia de otros hongos, se desarrolla bajo la tierra y su maduración se lleva a cabo a medida que transcurre el invierno. La época de recolección se inicia en Noviembre y finaliza en Marzo, por lo que es necesario ir recogiéndolas a medida que van madurando. A diferencia de la legislación francesa, en España no existe una legislación especifica que regule la comercialización de trufa fresca, ni en conserva y de productos elaborados. Actualmente, las empresas españolas se adaptan a las exigencias del cliente final a nivel interno y para la exportación.
