This poster presents findings from the VitiRosé project (2018–2020), investigating the impact of late, severe leaf surface reduction (50 % at véraison) on Grenache vines in Provence. The study shows this practice reduced water stress, delayed harvest by 6–8 days, and improved vine water status, while maintaining yield and must nitrogen levels. Sensory analysis found no significant differences in wine flavor between treated and control wines. The methodology combines analytical and sensory evaluation of Mediterranean wines to identify key factors in rosé grape production. Results suggest the practice supports vine resilience under heat stress but may not enhance wine quality compared to higher leaf area.
