    A2A2 melk, niche of marktopportuniteit?

    In koemelk zit een belangrijk eiwit genaamd beta-caseïne, dat in twee hoofdvarianten voorkomt: A1 en A2. De meeste koeienrassen (zoals Holstein-Friesian) produceren melk met een mengsel van A1 en A2 eiwitten. Sommige koeien, zoals Jersey- of Guernsey-koeien, kunnen genetisch gezien alleen het A2A2-genotype hebben. Zij produceren dus melk met alleen A2-eiwitten. A2-melk wordt vaak gepromoot als makkelijker verteerbaar en minder belastend voor de spijsvertering, vooral voor mensen die last hebben van buikklachten bij gewone melk (maar geen echte lactose-intolerantie hebben).
