A2A2 milk contains the A2A2 Beta Casein variant, distinct from the more common A1A1 variant, due to historical genetic selection in dairy cattle. Recent years have seen dedicated production and marketing of A2A2 milk in several countries, driven by consumer interest—particularly in New Zealand—over digestive differences. Farmers can establish A2A2 herds via genetic testing of milk to identify carriers and breed with A2A2 bulls, or by purchasing A2A2 cows, though the latter is costly and complex. Farm-level certification ensures authenticity. In Italy, the Parmaggrega Operational Group is pioneering A2A2 Parmigiano-Reggiano PDO cheese. Milk testing is more cost-effective than blood or hair testing. Challenges include long timelines for herd conversion, integration with existing breeding goals, and varying impacts on animal welfare, environment, and economic resilience.
