The EIP project "Extrawurst" in Nordhessen, Germany, develops guidelines for low-stress, on-farm slaughtering of cattle to eliminate live animal transport. Since 2011, the farm has held an exemption allowing on-site slaughter using a bolt gun, ensuring rapid bleeding within 60 seconds and arrival at the slaughterhouse within one hour, complying with EU standards. The mobile slaughter unit is integrated into the farm, reducing stress and transport suffering. The project, supported by the Kassel Regional Office, promotes transparency and animal welfare, offering consumers verifiable ethical practices and enabling the farm to charge a premium. It aims to establish a sustainable, humane alternative to conventional slaughter methods.
