Animal Welfare Assessment Methods on Farms, During Transport and at the Slaughterhouse

This paper reviews and analyses existing methods and tools for assessing animal welfare on farms, during transport, and at slaughterhouses, integrating both environmental and animal-based indicators. It also examines stakeholder perceptions, highlights the need for specific co-constructed tools, and explores the role of the human-animal relationship in improving welfare practices.

Over recent decades, animal welfare in livestock production has progressed from regulatory compliance to the use of sophisticated assessment tools combining environmental and animal-based measures. This study reviews welfare assessment tools applied at farm, transport, and slaughterhouse stages through literature surveys and fact sheets, and reports interviews on operator perceptions. Findings from a final seminar indicate that future tools must be tailored to specific operator needs and developed collaboratively. The project also investigates human-animal interactions using sociological, ergonomic, ethological, and zootechnical approaches, suggesting that understanding animal reactions during handling can improve welfare practices.
