Water Stress and Climate Change Adaptation in Viticulture and Oenology: The LACCAVE Project

The paper presents the LACCAVE project, which brings together INRA researchers to analyze water stress impacts on grapevine and wine quality and to develop multidisciplinary adaptation strategies for French viticulture under climate change. This article introduces the LACCAVE project, coordinating twenty‐three INRA laboratories to study water stress effects on vine physiology, grape maturation, and wine quality in the context of climate change in France. It first defines adaptation and reviews projected increases in water deficits due to higher temperatures and altered precipitation patterns. The paper synthesizes research on climate impacts and proposes integrated adaptation strategies, including varietal selection, modified agronomic and oenological practices, spatial planning, institutional reforms, and evolving consumer expectations. LACCAVE’s work packages and foresight approach aim to support collaborative networks with growers as key drivers of sectoral resilience.
