The study examines the spatial distribution and growth of organic agriculture in France, drawing on recent econometric analyses at multiple territorial scales. It uncovers a dual dynamic: broad spatial expansion fueled by increased availability of organic products in mainstream food distribution and rising downstream demand, alongside local agglomerations driven by proximity to consumer markets and short‐supply circuits. The authors discuss the influence of public policies, territorial specificities, and market structures on these dynamics. They argue that incentive programs often overlook complex local processes and recommend more targeted policies to support local innovation and sustainable diffusion of organic farming.
