In response to climate change–induced deficits in vineyard water balance, this paper explores a precision enology approach for harvests affected by prolonged hydric stress. It details the interventions across winemaking operations— from oxidation control during extraction to stabilization and packaging— that target alcohol level, acidity and pH equilibrium. The authors highlight recent membrane technology innovations integrated with online sensors, now permitted by regulation and available as service solutions, which address the scientific and technological challenges of correcting physico-chemical and sensory imbalances in stressed-vine wines.
