Latte con valore aggiunto: il caso A2A2
Il latte A2A2 si caratterizza per la prevalente presenza di Beta Caseina A2A2, diversamente dal latte normalmente disponibile in commercio, che contiene principalmente la variante A1. La Beta Caseina A2A2 era in origine la più diffusa, ma la pressione selettiva ha col tempo favorito la diffusione della varinate A1. Negli ultimi anni, in molti Paesi sono nate linee produttive e di marketing legate al latte A2A2, valorizzando questa nicchia di mercato.
