The article reviews the emergence and necessity of gluten-free diets for medically diagnosed gluten intolerance, primarily coeliac disease, a genetic autoimmune disorder treated solely by a strict, lifelong gluten-free diet. It outlines European regulations defining 'gluten-free' and 'very low gluten' products, examines the physiological impact of gluten on intestinal villi, and discusses the psychological, social, and dietary challenges faced by sufferers. Drawing on a survey of members of the Association Française Des Intolérants Au Gluten (AFDIAG), the authors assess daily life implications and question the role of food industry actors in improving gluten-free options.
