BioFerment - Fermenting surplus organic vegetables into long-life products
Fermenting surplus vegetables into long-life products through farmer-industry collaboration
or
Detail description
Processes surplus organic vegetables into long-life fermented products through a collaborative initiative involving a processing company, organic farmers, and distribution channels. Recipes, production guidelines, and a dedicated fermentation station are developed with a product developer. Products are marketed via growers’ direct sales and subscription services under a shared brand, with optimised logistics for cost efficiency. The project supports better supply-demand alignment, stable market prices, and reduced food waste. Funded by the European Union and made available via EU-FarmBook.
