Los Pedroches PDO Iberian ham is a premium product from the dehesa agroforestry system in Sierra Morena, Córdoba, Spain. Sourced from free-range Iberian pigs fed on acorns, it reaches up to 242 euros/kg. The PDO ensures quality and traceability, valorising the region’s natural, cultural, and social capital. Challenges include climate change and limited market share. Recommendations include professionalisation, better marketing, consumer education, infrastructure upgrades, tree rejuvenation, and integrated governance. This niche value chain supports sustainability and resilience in mountainous regions.
