    Aproximación al mercado español de la trufa negra en España y su perfil de consumidor

    Trufa es el nombre que recibe lo creado por un hongo ectomicorrícico ascomiceto de forma globular según AgriTruffe. Un solo hongo puede dar lugar a varias trufas. Las cosechas de trufas dependen en gran medida de las condiciones climáticas, como la sequía. Existen cientos de tipos de trufas en el mundo, siendo las principales: - La trufa negra (tuber melanosporum). - La trufa blanca (tuber magnatum),principalmente en Italia. - La trufa de verano (tuber aestivum). Monopolizado durante mucho tiempo por Europa, el mercado mundial asiste actualmente a la entrada de nuevos actores, como Estados Unidos, Australia y China. Dentro del propio gigante europeo, el equilibrio de fuerzas ha cambiado en los últimos años, y España es ahora el primer productor mundial. Sin embargo, la demanda interna española sigue siendo baja, lo que convierte a España en un productor orientado en gran medida a la exportación.
